We’ve been sautéing ours with mushroom and eggplant. Daily. Still not sick of it!
Sometimes our carrots are sweet potatoes or beets, and sometimes our bells are squash or shrooms or asparagus or…whatever is needing to get eaten.

I still need to finish planting my winter garden or I’ll be missing my third season (since everything goes on hiatus here in the summer…)

I will, especially for you. I’ve lived that loss of moving prior to harvest and hoping the new stewards savored the results. Florida will open up all sorts of gardening options!
